As we got a bit older popcorn nights
changed. We still had plenty of popcorn nights just like this,
yet Mom would clip coupons for microwavable popcorn & so we began giving
the microwave popcorn a try too. We’d intermingle microwave popcorn with the
kettle popcorn; Mom & Dad even had an air popping machine at one time too.
None of these lasted too long. We probably only had the microwave popcorn when Mom did notice coupons for it & the air popping machine was large & cumbersome so much so it took up an entire counter &was rather obvious; it wouldn’t have been like keeping one’s can opener or blender atop the kitchen counter due to frequent use. And pulling out appliances just when they’re needed can sometimes lead to just not really ever needing them, thus the life of the air popcorn popper in our house.

Popcorn, as I’d enjoy it nowadays,
resembles a slightly different version of the early days of our family’s
popcorn nights. I think the biggest change I’d make would be using Celtic Sea Salt,
which I use for everyday use, rather than the salt my parents keep in their
kitchen cabinet.
I’d not measure it out the ingredients
either. Rather, I’d put in a thin layer of oil, I’ve tried it with coconut oil (this is the kind I use),
though I’d most likely use an olive oil such as this, followed by adding a thin layer of
kernels, in so that the pot’s entire bottom is just covered, or barely covered.
I try to use as small a pot as possible as well; after all, I’m making popcorn
just for me &, although leftover popcorn is quite delicious, freshly popped
kernels are the absolute best.
